1. Use Large, Fatty Cuts of Meat

Go for cuts of meat like brisket, pork shoulder, and ribs, that a large and full of fat, to cook on low heat. You don’t want anything too lean or it might dry out too much from the hours on the grill.

2. Leave Lots of Room

Because the barbequing process relies so much on indirect heat, you need to allow plenty of room. This makes it possible for the smoke to really penetrate the meat. While you may be tempted to try to cook as much as possible, keep it to just a few racks.

3. Don’t Rush

It’s all about the timing. The amount of time it takes depends on the heat, weather, and the meat itself. In general, though, you can account for a minimum of 3-4 hours for ribs and up to 12-14 hours for a pork shoulder or brisket, if you’re cooking at 225 degrees Fahrenheit.
