After rubbing it with salt and pepper, marinate swordfish with olive oil, lemon juice, garlic, and fresh rosemary. This works best directly on the grill for 5-6 minutes on each side. Make sure to be patient before flipping because the texture of swordfish can great awesome grill marks.

Tilapia

Season this by salt and peppering the filets and then brush it with a lemon vinaigrette. You can make it with olive oil, garlic, peppers, and lemon peel. Cook the tilapia in an aluminum foil packet for 5-6 minutes on each side. Make sure to flip the packet carefully to keep the fish from crumbling.

Tuna

Season this fish with olive oil and then rub it with salt and pepper just before grilling. It works best directly on the grill with just 3 minutes per side for medium rare. If you’re interested in smoking, consider using hickory chips for a flavor boost.

Halibut

Marinate the fish with butter, lemon juice, onion powder, dill, salt and pepper. This works best in an aluminum foil packet cooking for 5-6 minutes on each side. For help, halibut is cooked through when the center of the filet is opaque.
