The Rub
Combine the following ingredients and after the turkey is thoroughly cleaned, rub the mixture all over the bird and under the skin where it is possible.
- 2 tbsp red pepper flakes
- 2 tbsp dry parsley
- 2 tbsp ground black pepper
- 2 tbsp kosher salt
- 2 tsp garlic powder
The Butter Injection
You’ll need:
- 1 Stick of melted Butter
- 1 tsp ground black pepper
- 1 tsp garlic powder
Combine and inject the butter solution into breast and legs 4-5 times per side. You’ll want to make 4 horizontal injections and 1 vertical injection per breast to ensure even coverage. You should also consider injecting legs and thighs several times too.
Taking it To the Propane Gas Grill
Placing the Turkey in a drip pan on top of the grate, you can cook your turkey between 350° and 400° F for 1.5 to 2 hours with the lid closed. You should light outside burners, leaving the middle one off, so the turkey sits cooking from residual heat. As a note, you should always take the temperature from the thickest part of the breast. According to Butterball, “Your turkey is done when the temperature with a meat thermometer is 180° F in thigh and 165° F in breast or stuffing.”
