At Daughtridge Energy, there’s nothing we love more is some nice barbecue cooked on our gas grills in Rocky Mount, NC. With the weather getting even colder and the risk for ice storms this time of year, there’s no better time to heat up with the comforting flavors of eastern barbecue. Luckily, if you haven’t put away your propane gas grill, you can make it for dinner tonight. To get you started, here is one of our favorite recipes from the Food Network, BBQ sauce recipe included.

Eastern North Carolina Barbecue

Ingredients

  • 1 Fresh Pork Butt, Bone-In
  • Kosher Salt
  • Barbecue Sauce (Recipe to follow)
  • hickory, oak, and maple wood chunks or chips for your smoker

Directions

  1. Put hickory, oak, and maple wood chips in your smoker. When the chips are ready, add the pork and smoke it for 2 to 2 1/2 hours at 250°F. Remove the pork and wrap it in heavy-duty aluminum foil. If you want tips doing this, check out our smoking guide.
  2. Preheat the grill to 225° F
  3. Cook the pork for 6 to 8 hours or until the meat is tender and falls apart when the bone is removed.
  4. Chop the pork coarsely and mix in the salt and barbecue sauce. Of course, do the amount that is the best tasting to you.

The Sauce

Ingredients

  • 2 Cups Apple Cider Vinegar
  • 2 Tablespoons Crushed Red Pepper
  • 1/2 Tablespoon Chopped Garlic
  • 1/2 Tablespoon Kosher Salt
  • 1 Tablespoon Black Pepper

Directions

  1. In a medium saucepan, combine the vinegar, red pepper, garlic, and salt over high heat.
  2. Bring to a boil and then reduce the heat to medium-high. Boil for 15-20 minutes and then remove from the heat
  3. Let it cool and then add the black pepper.
