Sure beef, pork, chicken, and lamb are great on the grill but vegetables really make the dish. No matter the season, we’re out grilling our veggies and so should you. With that in mind, here’s our quick guide to grilling vegetables.

Peppers

Simply cut in half lengthwise and coat with oil and you’re good to go. Heat it up to 400°- 425°These take 6-10 minutes with the skin side down and 3-4 minutes on the other side.

Corn

To prep, pull the husk down and soak for 15 minutes in cold water. Then pull the husk up to start grilling. Heat it up to 350° and cook for 10-20 minutes turning throughout.

Onion

Peel and and cut into 1/2 inch rings. In addition, brush it with olive oil and sprinkle with salt. Heat up the grill to  400°- 425°  and cook for 8-10 minutes turning throughout.

Summer Squash/Zucchini

Cut in thirds or halves, then brush it with olive oil, and sprinkle it with salt. Heat up the grill to  400°- 425° and grill it 5 to 8 minutes per side.

Mushroom

Mushrooms are a little different: brush with olive oil and then grill for 8-10 minutes on 400°- 425° heat. Then you can slice them up to serve.

Artichoke

These are our personal favorite. Cut these in half lengthwise, then press down to spread the leaves open. Brush them with olive oil and sprinkle with salt. To grill cook 15-20 per side on 350° heat.
